Soil Sand clay with little organic composition.
Age of Vines 8-22 years 
Yield Xinomavro 60hl/ha, Merlot 50hl/ha
Harvest End of August (Merlot). Middle to the end of September (Xinomavro).
Vinification/Maturation Alcoholic fermentation and extraction at 23˚C. Indigent yeasts use. Post fermentation extraction at 20°C in wooden vats, malolactique fermentation and maturation in French barrels of oak for 12 months. The wine matured in bottles for 1 to 2 years in the winery cellar.

Tasting notes The color is red purple with ruby hues. On the nose aromas of red cherries, helmet and dried ripe fruit (black plum) coupled with spices, canella and dried tomatoes. On the mouth a rich body with ripe tannins, complexity and volume is accompanied by a long after tasting.
