Soil Sand clay with little organic composition.

Yield Sauvignon 40hl/ha, Roditis 80hl/ha, Kydonitsa 65hl/ha, Xinomavro 60hl/ha
Harvest End of August (Sauvignon). Beginning to the middle of September (Roditis, Xinomavro). End of September (Kydonitsa).
Vinification/Maturation Skin contact for 7-9h at 14˚C. Alcoholic fermentation at 16˚C. A part of Xinomavro (blanc de noirs) is fermented in French barrels of oak with regular batonnage. All wines are ageing over fine lees for 3-4 months before blended.

Tasting notes The bright color is yellow-green with a few greenish hues. The nose is expressive with complexity of peach, pineapple, lemon skin flavor and hazelnut. The mouth is rich, sweet and smooth and the finish is long, complex and with constant evolution.
